Rogue Rage is a Small batch Hot Sauce created for the more discerning connoisseur. We create each sauce in small batches, aged in single barrels. As a fermented sauce using a wide variety of seasonal Hot peppers, spices, and seasonings, we create each sauce in small batches which are fermented and aged in single barrels, using centuries old fermentation techniques that have been around for thousands of years. We create a unique sauce with layer upon layer of flavours and heat. We truly believe what we do is an artform. The final product is the reward for many years of studying and good old hard work.


In keeping with our current theme, we are now offering our current version of one of the most famous hot sauces in the world. It’s made in Louisiana. Like our other sauces, it’s fermented then well aged, contains no pesticides, is NON GMO, Vegan Friendly, and contains no artificial flavours or colours. We’ve also added smoked Guajillo peppers for a nice, rounded Smokey essence and flavour with a medium/High heat that’s sure to keep the pilot light on, but not the entire burner.
It doesn’t take chemicals and artificial stabilizers to create a great looking and shelf stable product that’s also great tasting. We’ve tried most of them, but have landed on using the ones that, to us, have the best flavour profile. Mostly we use Tabasco, Habanero, and Guajillo and peppers to deepen the flavour and Bird’s eye chilis as a base. No matter the time of year, these peppers are always available, plus we grow our own when the weather cooperates long enough for the plants to mature enough to bare fruit. When all the tasting is said and done, the consensus is that the Chocolate Habanero is the clear winner when it comes to flavour. it has a nice stone fruit flavour with a very earthy base, lending a very hearty backbone to most of our sauces.

Of course we keep track of most other popular peppers like the Infamous Carolina Reaper to the Ghost pepper, which was dethroned by the Reaper. We’ve yet to use Pepper X, which has taken the pole position in terms of Scoville Heat units (heat). Unless there’s standing orders, each sauce is seasonal and is made according to availability of ingredients.
